DETAIL ITINERARY
Day 1: Hanoi Arrival

Welcome to Hanoi – the Capital city of Vietnam!
Upon arrival at Noi Bai Airport, you will be picked up by Vietnam Tours Expert’s tour guide and driver, transferred to your hotel for check in. In the evening, enjoy your welcome Dinner at famous Madam Hien’s restaurant. Set in a beautifully restored French villa, the “Madam Hien” restaurant serves specialties originating primarily from northern Vietnam.

Day 2: Hanoi City – Hanoi Cooking class

After breakfast at your hotel, you will have a morning to explore this fascinating city by visiting Ho Chi Minh complex (including Ho Chi Minh Mausoleum, Presidential Palace, House on Stilts and One Pillar pagoda), the Fine Arts Museum, the Temple of Literature. Enjoy your special lunch with “Cha Ca La Vong” (Special Grilled Fish Hanoi Style). In the afternoon, enjoy a Cyclo ride from your hotel to a restaurant in the Old Quarter for a cooking class, where you will learn about the art of traditional Vietnamese cuisine. Visit a lively local market before donning a chef’s uniform for a hand-on cooking class demonstration. Learn how to make a number of regional delicacies, which may include Banana Flower Salad and Spring Rolls. After a half-afternoon session, you enjoy a delicious feast of the dishes you created, and get to take a copy of the recipes home with you. Enjoy a cyclo ride head back to your hotel.

Day 3: Hanoi – Halong bay

Relax on a 3.5 – hour drive to Halong Bay, we will go through provinces in the Red River delta, where you will have a great chance to meet peasants working on their rice field or observe traditional bamboo villages of Vietnam rural area. Once at Halong City, you will board our private boat for a 4 hour cruise of this stunning area, stopping along the way to visit one of the limestone caves in the area and a floating fishing village. As you cruise, our boat staff will serve a sumptuous local seafood lunch.  Disembark to the pier after 4 hours cruising in the legendary bay, transfer to you hotel in Halong city. You will have free evening to experience local restaurants on your own.

Day 4: Hue – Spicy Corner

In the morning, we will take another drive to Hanoi’s airport for flight to Hue. Today, you will have lunch on your own account. You will be welcomed by our driver and tour guide at Hue’s airport, transferred to your hotel for check in. Spend your free time in the afternoon to explore the city as you wish. In the evening, you will take a cyclo ride to Cung Dinh restaurant for dinner. Food in Hue is spicy, with considerable use of chili, reflecting its imperial roots.  It is often presented in carefully displayed small servings, a kind of Oriental nouvelle cuisine.

Day 5: Hue – Hoi An

Travel by Dragon Boat on the romantically named Perfume River which leads to Thien Mu pagoda, standing on the riverbank with its seven-story tower. You will then transfer by car to the Imperial Citadel, from which the Nguyen emperors once ruled Vietnam.
In the afternoon, we will travel to Hoi An, passing vivid green field of rice and the wonderfully photogenic fishing village of Lang Co. Upon arrival in Hoi An, you will check in your hotel and free relaxation. Overnight at the 4 star Hoi An Trails resort or similar and finish the 5th day for Vietnam Cooking Holiday.

Day 6: Hoi An – Fusion Cuisine

Hoi An was a trade center for Spanish, Portuguese, Japanese and Vietnamese during the seventeenth and eighteenth centuries. We board the Red Bridge boat for a leisurely cruise (25 minutes) along the Hoi An River to the Red Bridge Cooking School. This is a chance to view local river life, so make sure your camera is handy. Next, explore the cooking school’s herb and vegetable garden, before learning about some of Hoi An’s and Vietnam’s well-known dishes. The cooking class is an interesting and fun way to learn about the local cuisine – the class runs for about an hour and 15 minutes, and includes demonstrations from the school’s chefs as well as the chance for us to help prepare some dishes. Included in the demonstration is a brief introduction to Vietnamese food carving. Enjoy your lunch with your dishes. In the afternoon, enjoy your half – day walking tour visit: Chua Ong Pagoda, Chinese Assembly Halls, the 200- year old Tam Ky ancestral house, and the Japanese Bridge.

Day 8: Danang –  Saigon

After breakfast, transfer to Da Nang Airport for a morning flight to Saigon, or Ho Chi Minh City as it is now officially known. After check in your hotel, you will have a lunch of famous “Pho” – Vietnamese noodle. Next up is a half day city tour which includes the Unification Palace, Notre Dame Cathedral, the Old Saigon Post Office and Cholon, the city’s lively Chinatown. Dinner at Vietnam House – one of Saigon’s best – known restaurants. The cuisine of the south uses many herbs and spices and has been influenced by Cambodia, Thailand and India, among others. Curries using coconut milk are an example of this influence. The south also has a wide selection of tropical fruits and vegetables that are not readily available in the cooler north.  You experience all of this before retiring for a restful overnight stay.

Day 9: Mekong Delta – Exotic food

Spend your whole day for the watery world of My Tho in the Mekong Delta, just a couple of hours by road from the hustle and bustle of Saigon. Embark on a boat trip along the narrow waterways, overhung with dense vegetation, and try exotic fruits in one of the many orchards. Lunch will be served at a riverside restaurant with a specialty of Fish. This will give you a fascinating glimpse into the daily life of the people who work, rest and play on the mighty Mekong and its numerous tributaries. Drive back to Saigon in the afternoon, followed by a farewell dinner on a boat cruise on Saigon River, where you can enjoy the chef’s cooking demonstration in the airy, open-plan kitchen.
